Orange-Spice Shortbread

½ c. Hy-Vee unsalted butter, at room temperature | ||
½ c. plus 2 tbsp Hy-Vee powdered sugar, divided | ||
2 tsp. orange zest | ||
½ tsp. ginger | ||
¼ tsp. Hy-Vee ground cinnamon | ||
1 c. Hy-Vee all-purpose flour |
Directions
- Cream butter until light; add 1/2 cup powdered sugar, orange zest, ginger and cinnamon, mixing until smooth. Add in flour until mixed well, kneading if necessary until smooth.
- Roll dough out to about 1/4-inch thick onto a lightly floured cookie sheet. Press with a cookie press, if desired, or leave plain. Dough can also be pressed into cookie molds.
- Bake at 325 degrees until very lightly golden, about 22 to 24 minutes. In molds this takes about 30 to 36 minutes. Cut with a very sharp knife as soon as they come out of the oven.
- Cool completely. Dust with remaining powdered sugar.
