1 ½ tsp. Hy-Vee Select extra-virgin olive oil | ||
½ tsp. Hy-Vee salt | ||
¼ tsp. freshly ground black pepper | ||
8 c. romaine lettuce leaves, torn into bite size pieces | ||
1 c. thinly sliced red onion | ||
1 (2.25 oz) can Hy-Vee sliced ripe olives, drained | ||
1 (11 oz) can Hy-Vee mandarin oranges, drained | ||
½ c. crumbled feta cheese | ||
2 tbsp. pine nuts |
Directions
- In a large bowl, toss together romaine lettuce, red onion, ripe olives, mandarin oranges and feta cheese.
- Combine lemon juice, olive oil, salt and black pepper in a small bowl.
- Drizzle lemon dressing over top. Toss to coat. Top with pine nuts. Serve immediately.
