    2 tbsp. lemon juice
    1 ½ tsp. Hy-Vee Select extra-virgin olive oil
    ½ tsp. Hy-Vee salt
    ¼ tsp. freshly ground black pepper
    8 c. romaine lettuce leaves, torn into bite size pieces
    1 c. thinly sliced red onion
    1 (2.25 oz) can Hy-Vee sliced ripe olives, drained
    1 (11 oz) can Hy-Vee mandarin oranges, drained
    ½ c. crumbled feta cheese
    2 tbsp. pine nuts

    Directions

    1. In a large bowl, toss together romaine lettuce, red onion, ripe olives, mandarin oranges and feta cheese.
    2. Combine lemon juice, olive oil, salt and black pepper in a small bowl.
    3. Drizzle lemon dressing over top. Toss to coat. Top with pine nuts. Serve immediately.
