Directions
Pat tilapia dry with paper towels. Sprinkle with lemon & herb seasoning; set aside. Place flour into a shallow bowl. Whisk egg and milk in another shallow bowl. Stir together bread crumbs, 1 tbsp. lemon zest and 1 tbsp. dill in a third shallow bowl.
Dip fish, one piece at a time, into flour mixture to coat; shake off excess. Then dip into egg mixture; coat with panko mixture, gently pressing to adhere.
Place coated fish pieces 1 in. apart in prepared baking pan. Generously spray with nonstick spray. Bake for 15 to 20 minutes or until fish reaches 145 degrees and is golden and crisp, turning occasionally and spraying with nonstick spray. Season to taste with sea salt.
Stir together tartar sauce, remaining 1 tbsp. lemon zest, remaining 1 tbsp. dill and and onion and herb seasoning in a small bowl.
To serve, season fish bites to taste with sea salt and garnish with additional dill, if desired. Serve with sauce for dipping.
