    1 ½ c. chicken broth, boiling
    1 tbsp. margarine or butter
    ¾ c. long-grain rice
    ¼ c. sliced green onion
    ¼ c. chopped celery
    ¼ c. chopped carrot
    ¼ c. chopped mushrooms
    2 tbsp. crumbled crisp bacon

    Directions

    1. Preheat oven to 350 degrees.
    2. In a 1-quart casserole dish, combine broth and margarine. Stir until melted.
    3. Stir in rice, onion, celery, carrot, mushrooms and bacon.
    4. Cover and bake for 30 to 40 minutes, or until rice is tender and liquid is absorbed.
    5. Fluff with fork.
