Oven-Cooked Rice Pilaf

1 ½ c. chicken broth, boiling | ||
1 tbsp. margarine or butter | ||
¾ c. long-grain rice | ||
¼ c. sliced green onion | ||
¼ c. chopped celery | ||
¼ c. chopped carrot | ||
¼ c. chopped mushrooms | ||
2 tbsp. crumbled crisp bacon |
Directions
- Preheat oven to 350 degrees.
- In a 1-quart casserole dish, combine broth and margarine. Stir until melted.
- Stir in rice, onion, celery, carrot, mushrooms and bacon.
- Cover and bake for 30 to 40 minutes, or until rice is tender and liquid is absorbed.
- Fluff with fork.
