Oven-Roasted Butternut Squash

2 tbsp. Hy-Vee Select olive oil | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Slice butternut squash in half lengthwise. Remove seeds and discard. With a sharp knife, slice outside skin off and discard. Cut squash into 1-inch cubes.
- Place cubed squash on foil-lined baking sheet. Drizzle with olive oil and season with salt and pepper.
- Bake in 400-degree oven for 40 to 45 minutes or until fork-tender.
