Over-Stuffed Chorizo Quesadillas

1 lbs. chorizo, crumbled, cooked and drained | ||
1 c. Hy-Vee shredded Mexican cheese blend, divided |
Directions
- Evenly place half the chorizo on one tortilla. Sprinkle with 1/2 cup cheese and top with another tortilla. Place in a preheated quesadilla maker.
- Cook 4 to 5 minutes or until cheese is melted and tortilla is crispy and golden-brown.
- Repeat with remaining chorizo, cheese and tortillas.
- Cut quesadillas into wedges and serve with sour cream.
