½ (32 oz) pkg That's Smart spaghetti
2 (14.5 oz each) cans Hy-Vee Italian-style diced tomatoes, undrained
1 tbsp. Hy-Vee Select extra-virgin olive oil
Hy-Vee salt and Hy-Vee black pepper, to taste
Hy-Vee grated Parmesan cheese, optional

Directions

  1. Cook spaghetti according to package directions; drain.
  2. Meanwhile, stir together tomatoes, olive oil, salt and pepper in a large bowl.
  3. Add hot pasta and mix until thoroughly combined. Sprinkle with Parmesan cheese, serve immediately.
  4. Variation: Process tomatoes in a food processor or blender until smooth. Proceed with step 2 as directed.
