Pasta Salad with Garbanzo Beans, Tomatoes and Feta Cheese

1 (12 oz) box Hy-Vee bow tie pasta | ||
¼ c. finely chopped fresh mint | ||
2 tbsp. fresh lemon juice | ||
2 tbsp. Hy-Vee Select white wine vinegar | ||
2 tsp. grated lemon peel | ||
¼ c. Hy-Vee Select olive oil | ||
1 pt. grape or cherry tomatoes, halved | ||
1 (15 oz) can Hy-Vee garbanzo beans, rinsed and drained | ||
⅓ c. Kalamata olives, pitted and sliced | ||
4 oz. feta cheese, crumbled | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Prepare pasta according to package directions; drain and rinse with cold water to cool. Drain again.
- In a large bowl, combine mint, lemon juice, vinegar and lemon peel. Gradually whisk in oil. Add pasta, tomatoes, garbanzo beans, Kalamata olives and feta cheese. Toss to blend well. Season salad to taste with salt and pepper.
- Refrigerate for 2 hours before serving.
