Pea Crostini

1 pre-sliced Hy-Vee Bakery 100% whole wheat baguette | ||
1 ½ c. frozen peas, thawed | ||
2 tbsp. extra-virgin olive oil | ||
Salt and pepper, to taste | ||
8 oz. goat cheese | ||
sliced watermelon, radishes or beets, optional |
Directions
- Preheat oven to 350 degrees.
- To make crostini, lay individual slices of baguette bread flat on pan to brown in oven. Watch so as not to burn the bread. Flip after 5 minutes. When crostini is browned, cool on cooling rack.
- Combine peas, olive oil, salt and pepper in a food processor until coarsely pureed.
- Spread goat cheese on top of crostini. Top each with a spoonful of pea puree. Garnish with sliced watermelon, radishes or beets, if desired.
