1 pre-sliced Hy-Vee Bakery 100% whole wheat baguette
1 ½ c. frozen peas, thawed
2 tbsp. extra-virgin olive oil
Salt and pepper, to taste
8 oz. goat cheese
sliced watermelon, radishes or beets, optional

Directions

  1. Preheat oven to 350 degrees.
  2. To make crostini, lay individual slices of baguette bread flat on pan to brown in oven. Watch so as not to burn the bread. Flip after 5 minutes. When crostini is browned, cool on cooling rack.
  3. Combine peas, olive oil, salt and pepper in a food processor until coarsely pureed.
  4. Spread goat cheese on top of crostini. Top each with a spoonful of pea puree. Garnish with sliced watermelon, radishes or beets, if desired.
