½ tsp. cinnamon | ||
½ tsp. nutmeg | ||
½ c. sugar | ||
⅔ c. soy milk | ||
¼ tsp. almond extract | ||
1 (16 oz) can sliced peaches, well-drained and cut into 1/2-inch pieces |
Directions
- Preheat oven to 350 degrees.
- In medium bowl, combine flour, soy flour, baking powder, cinnamon, nutmeg and sugar. Stir together well.
- Add soy milk and almond extract. Stir just until blended. Gently stir in well-drained chopped peaches.
- Pour batter into 8-inch square baking pan coated with nonstick cooking spray.
- Bake at 350 degrees for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Cut into 9 squares to serve.
