6 c. peeled, pitted, sliced fresh peaches | ||
1 c. Hy-Vee raspberry low-fat yogurt | ||
⅔ c. part-skim ricotta cheese | ||
¼ c. packed Hy-Vee brown sugar | ||
2 tbsp. uncooked Hy-Vee quick oats | ||
1 tbsp. Hy-Vee chopped pecans | ||
1 tbsp. Hy-Vee butter, melted |
Directions
- Preheat oven to 450 degrees. Place peach slices in an ungreased 8-by-8-inch baking dish.
- In a medium bowl, stir together yogurt and ricotta cheese. Pour evenly over peaches.
- In a small bowl, stir together brown sugar, oats, pecans and butter until crumbly. Sprinkle over dessert. Bake 7 to 8 minutes or until brown sugar is melted. Serve immediately.
