Meanwhile, stir together mayonnaise, remaining 1 tablespoon cilantro, and 1 tablespoon lime juice in a small bowl; set aside. Preheat a charcoal or gas grill for direct cooking over medium heat (350 degrees).
Grill patties 14 to 16 minutes or until patties reach 165 degrees, turning halfway through and topping with cheese during the last 1 to 2 minutes, if desired.
Meanwhile, grill onions and peaches for 5 to 7 minutes or until slightly charred, turning halfway through. Grill buns, cut sides down, for 1 to 2 minutes or until lightly toasted.
