Peaches and Cream Coffee Cake

3 tbsp. butter, softened | ||
1 (3 oz) pkg cook and serve vanilla pudding mix | ||
½ c. milk | ||
1 large egg | ||
1 (15 oz) can sliced peaches, drained and 3 tablespoons liquid reserved | ||
1 (8 oz) pkg cream cheese, softened | ||
¼ c. sugar | ||
1 tbsp. sugar | ||
⅓ c. chopped nuts | ||
½ tsp. cinnamon |
Directions
- Preheat oven to 350 degrees. Spray a 9-inch-square baking dish with nonstick cooking spray.
- Combine flour, salt, baking powder and butter. Add pudding mix, milk and egg; beat 2 minutes. Pour into prepared pan. Top with peach slices.
- Beat cream cheese, 1/4 cup sugar and reserved peach juice until smooth. Spoon over batter leaving 1-inch border around edge.
- Combine 1 tablespoon sugar, nuts and cinnamon. Sprinkle on top of batter.
- Bake for 30 minutes.
