Peachy Goat Cheese Bites

6 slice(s) honey grain and seed bread, cut in half | ||
2 tbsp. Hy-Vee Select olive oil | ||
2 (4 oz each) logs goat cheese (chèvre) | ||
2 medium peaches, pitted and thinly sliced | ||
2 tbsp. Hy-Vee honey |
Directions
- Preheat oven to 425 degrees.
- For crostini, arrange bread slices in a single layer on an ungreased baking sheet. Lightly brush one side of each bread slice with oil.
- Bake, uncovered, for 4 minutes. Turn slices over and bake for 3 to 4 minutes more or until crisp and light brown.
- Spread goat cheese onto bread just before serving. Top with peach slices. Drizzle with honey.
