8 Hy-Vee soft and chewy peanut butter cookies | ||
2 c. Hy-Vee light vanilla ice cream, divided | ||
½ c. candy-coated mini baking chips |
Directions
- Spread 1 tablespoon peanut butter onto bottom side of each of 4 cookies.
- Spoon about 1/2 cup ice cream onto each cookie half. Cover with second cookie, top-side up.
- Roll edges in baking chips. Wrap each in foil.
- Freeze 1 to 2 hours or until firm.
