1 c. walnuts | ||
½ c. cocoa powder | ||
¼ c. honey | ||

Pumpkin filling: | ||
1 c. oat flour or quick oats | ||
⅓ c. sugar | ||
⅓ c. peanut butter | ||
1 c. pumpkin puree | ||
1 tsp. vanilla extract | ||

Directions
- Preheat oven to 350 degrees.
- In a food processor, pulse walnuts into a powder. In a medium bowl, mix walnuts and with cocoa powder, honey and egg white until well blended. Press into a greased 8-inch-square baking dish. It will be sticky.
- In another medium bowl, combine oat flour, sugar, peanut butter, pumpkin puree, vanilla and egg until well blended. Pour over chocolate crust.
- Bake for 25 minutes, or until set. Cool completely before cutting into bars.
