1 (13.25 oz) package Hy-Vee whole wheat penne | ||

2 oz. goat cheese | ||
1 oz. Hy-Vee reduced-fat cream cheese | ||
¾ tsp. Hy-Vee salt | ||
½ tsp. freshly ground black pepper | ||
6 oz. fresh baby spinach leaves | ||
2 tbsp. Hy-Vee grated Parmesan |
Directions
- Cook pasta according to package directions, reserving 1 cup of cooking liquid.
- Mince the garlic in a food processor. Add the goat cheese, cream cheese, salt, pepper and the spinach leaves. Blend until the mixture is smooth and creamy.
- In a large pot over medium heat, combine cheese mixture with pasta, adding enough reserved cooking liquid to moisten.
- Stir until heated thoroughly. Season to taste, with additional salt and pepper. Sprinkle with cheese and serve.
