    1 (13.25 oz) package Hy-Vee whole wheat penne
    2 garlic cloves
    2 oz. goat cheese
    1 oz. Hy-Vee reduced-fat cream cheese
    ¾ tsp. Hy-Vee salt
    ½ tsp. freshly ground black pepper
    6 oz. fresh baby spinach leaves
    2 tbsp. Hy-Vee grated Parmesan

    Directions

    1. Cook pasta according to package directions, reserving 1 cup of cooking liquid.
    2. Mince the garlic in a food processor. Add the goat cheese, cream cheese, salt, pepper and the spinach leaves. Blend until the mixture is smooth and creamy.
    3. In a large pot over medium heat, combine cheese mixture with pasta, adding enough reserved cooking liquid to moisten.
    4. Stir until heated thoroughly. Season to taste, with additional salt and pepper. Sprinkle with cheese and serve.
