6 c. dry Hy-Vee rotini pasta | ||
3 c. Hy-Vee medium salsa, divided | ||
3 c. cubed Hy-Vee pepper jack cheese | ||
6 tbsp. Hy-Vee sour cream | ||
1 ½ c. Hy-Vee black beans, rinsed and drained | ||
¾ c. diced green pepper |
Directions
- Prepare pasta according to package directions. Drain. Rinse with cold water and drain well.
- Stir together pasta, 1-1/2 cups salsa, cheese, sour cream, black beans and green pepper.
- Cover and refrigerate 2 to 3 hours.
- Stir in remaining 1-1/2 cups salsa prior to serving.
