6 c. dry Hy-Vee rotini pasta
3 c. Hy-Vee medium salsa, divided
3 c. cubed Hy-Vee pepper jack cheese
6 tbsp. Hy-Vee sour cream
1 ½ c. Hy-Vee black beans, rinsed and drained
¾ c. diced green pepper

Directions

  1. Prepare pasta according to package directions. Drain. Rinse with cold water and drain well.
  2. Stir together pasta, 1-1/2 cups salsa, cheese, sour cream, black beans and green pepper.
  3. Cover and refrigerate 2 to 3 hours.
  4. Stir in remaining 1-1/2 cups salsa prior to serving.
