    1 lbs. flat iron beef fillet
    Hy-Vee salt and Hy-Vee pepper, to taste
    8 B-sized red potatoes, boiled
    8 cherry tomatoes
    4 wooden skewers, soaked in cold water for at least 30 minutes
    ¼ c. store-bought pesto

    Directions

    1. Sprinkle beef with salt and pepper. Slice meat into 8 pieces.
    2. Alternate threading meat, cooked potatoes and tomatoes on skewers. Brush with pesto.
    3. Grill over high heat for about 3 to 5 minutes per side for medium-rare. Let rest 2 to 3 minutes before serving.
