2 c. fresh pineapple chunks (about half a fresh pineapple) | ||
2 oranges, peeled and cut into segments | ||
1 c. sliced strawberries | ||
1 c. toasted flaked coconut* | ||
¼ c. chopped macadamia nuts | ||
2 (6 oz each) cartons Yoplait 99% fat-free pina colada yogurt |
Directions
- In medium bowl, mix pineapple chunks, orange segments and sliced strawberries.
- In a separate bowl, combine coconut and macadamia nuts.
- In 6 parfait glasses, alternate layers of fruit, yogurt and coconut/macadamia nut mixture.
- *To toast coconut, layer coconut on shallow baking sheet. Toast at 350 degrees for 7 to 10 minutes until lightly browned, stirring frequently.
