    2 Hy-Vee large eggs
    ⅓ c. Hy-Vee sugar
    1 c. Hy-Vee skim milk
    2 c. Hy-Vee flour
    ½ tsp. Hy-Vee salt
    3 tsp. Hy-Vee baking powder
    2 tbsp. Hy-Vee vegetable oil
    ¾ c. drained Hy-Vee crushed pineapple
    ½ tsp. Hy-Vee cinnamon
    2 tbsp. packed Hy-Vee brown sugar

    Directions

    1. Beat eggs and sugar in mixing bowl. Add milk, flour, salt and baking powder, mixing lightly. Stir in oil and pineapple. Spoon batter into 12 greased muffin tins.
    2. Sprinkle cinnamon and sugar mixture on top.
    3. Bake at 375 degrees for 20 minutes.
