Pineapple Pico de Gallo

½ cored and peeled ripe fresh pineapple, diced | ||
2 Roma tomatoes, diced | ||
½ red onion, peeled and diced | ||
1 jalapeno, seeded, stemmed and diced | ||
1 tbsp. Gourmet Garden garlic paste | ||
¼ c. fresh lime juice (from about 2 limes) | ||
Salt and pepper, to taste |
Directions
- Toss together pineapple, tomatoes, onion, jalapeno, garlic and lime juice. Add salt and pepper to taste and toss again. Refrigerate leftovers.
