Heat oil in a large skillet over medium-high heat. Season pork chops with salt and pepper. Cook pork chops for 5 minutes. Turn and cook an additional 5 minutes or until interior temperature reaches 145 degrees. Remove pork chops from skillet. Keep warm.

Directions
Add onions to skillet. Cook and stir until onions are very soft, about 5 minutes. Reduce heat to low. Stir in sugar. Cook and stir until onions are caramelized and tender, about 5 additional minutes.
Stir in apple juice, balsamic vinegar and cherries. Bring to a boil, stirring constantly. Return pork chops and any accumulated juices to the skillet.
