1 (16 oz) bag frozen Hy-Vee stir-fry vegetables | ||
2 c. shredded cooked pork roast | ||
¼ c. water | ||
¼ c. Hy-Vee light soy sauce | ||
1 (8.8 oz) pouch Uncle Bens whole grain brown Ready Rice | ||
2 green onions, sliced |
Directions
- Spray a large skillet with nonstick cooking spray.
- Over medium heat, scramble eggs until just set. Stir in vegetables, pork, water and soy sauce. Cook, stirring occasionally until heated through, about 5 minutes.
- Meanwhile, cook rice according to package directions and stir into pork mixture.
- Sprinkle with green onion before serving.
