    Hy-Vee non-fat cooking spray
    2 Hy-Vee large eggs, lightly beaten
    1 (16 oz) bag frozen Hy-Vee stir-fry vegetables
    2 c. shredded cooked pork roast
    ¼ c. water
    ¼ c. Hy-Vee light soy sauce
    1 (8.8 oz) pouch Uncle Bens whole grain brown Ready Rice
    2 green onions, sliced

    Directions

    1. Spray a large skillet with nonstick cooking spray.
    2. Over medium heat, scramble eggs until just set. Stir in vegetables, pork, water and soy sauce. Cook, stirring occasionally until heated through, about 5 minutes.
    3. Meanwhile, cook rice according to package directions and stir into pork mixture.
    4. Sprinkle with green onion before serving.
