1 c. teriyaki or ponzu sauce, divided | ||
1 tsp. freshly grated lemon peel | ||
1 tbsp. fresh lemon juice | ||
1 tbsp. Hy-Vee honey | ||
1 tsp. peeled, minced gingerroot | ||
½ tsp. crushed red pepper flakes | ||
Fresh cilantro sprigs, optional |

Directions
- Place pork in a large resealable plastic bag. Add 3/4 cup of the teriyaki sauce. Seal bag and refrigerate 1 hour.
- Meanwhile, whisk together remaining 1/4 cup teriyaki sauce, lemon peel, juice, honey, ginger and red pepper flakes. Let stand 30 minutes.
- Preheat oven to 425 degrees. Remove pork from bag; discard marinade. Roast pork 30 to 45 minutes, brushing occasionally with teriyaki mixture or until instant-read thermometer registers 155 degrees for medium. Remove pork and let stand 10 minutes. Slice pork and arrange on platter. Top with fresh cilantro, if desired.
