Potato Salad for One

4 oz. unpeeled new potatoes | ||
¼ c. mayonnaise | ||
1 tbsp. chopped green bell pepper | ||
⅛ tsp. salt | ||

Directions
- Place potatoes in a 1-pint microwave-safe container. Cover with lid. In a microwave oven, cook for 2 minutes (in a 700-watt oven) or for 1 minute and 24 seconds (in a 1000-watt oven) at 100% power.
- Chill before serving.
- Cool potatoes enough to handle. Peel potatoes, then cut into halves and cut halves into thin slices.
- Place potato slices in a small bowl. Add mayonnaise, green bell pepper, salt, white pepper, cinnamon and nutmeg. Mix well.
