Description

When preparing scallops, remember to remove the adductor muscle from the scallop. It's found along the side of the scallop, is crescent shaped, and peels off easily.

2 tbsp. Hy-Vee Select red wine vinegar
2 tbsp. Hy-Vee Select olive oil
2 tbsp. chopped fresh basil
Hy-Vee black pepper, to taste
12 medium scallops
12 thin slices prosciutto

Directions

  1. Preheat oven to 350 degrees.
  2. In a bowl, stir together vinegar, oil, basil and black pepper. Add scallops and toss gently to coat. Let marinate at room temperature 15 minutes.
  3. Meanwhile, fold each slice of prosciutto in half lengthwise, then wrap each scallop in 1 slice prosciutto. Place wrapped scallops in a buttered baking dish, seam-side down.
  4. Bake 15 minutes or until scallops are cooked through.
