¼ c. Hy-Vee vegetable oil | ||
3 Hy-Vee large eggs | ||
1 c. canned pumpkin | ||
¼ c. water | ||
2 ¼ c. Hy-Vee flour | ||
1 ¼ tsp. Hy-Vee baking powder | ||
¾ tsp. Hy-Vee baking soda | ||
2 tsp. pumpkin pie spice | ||
¼ tsp. Hy-Vee salt | ||
¾ c. Hy-Vee mini chocolate chips |
Directions
- Preheat oven to 400 degrees. Stir together sugar, oil, eggs, pumpkin and water. Set aside.
- Combine flour, baking powder, baking soda, pumpkin pie spice and salt. Stir in pumpkin mixture; stir in chocolate chips.
- Fill greased muffin cups 2/3 full with batter. Bake for 25 to 30 minutes or until toothpick inserted in the center comes out clean.
