2 c. pumpkin seeds | ||
1 tbsp. salt | ||
1 tbsp. canola oil | ||
1 ½ tbsp. brown sugar | ||
½ tsp. cinnamon | ||
¼ tsp. ground ginger | ||
⅛ tsp. grated nutmeg | ||
½ c. combined dried cranberries and raisins |
Directions
- Bring water to a boil. Add salt and pumpkin seeds; boil for 10 minutes. Drain and pat seeds dry.
- Combine pumpkin seeds, oil, brown sugar, cinnamon, ginger and nutmeg.
- Line a baking sheet with parchment paper and evenly spread out seeds. Roast for 1 hours at 275 degrees.
- Place in bowl and toss in cranberries and raisins.
