Quick-and-Easy Holiday Bread Pudding

8 slice(s) Sara Lee honey wheat bread, day-old or lightly toasted | ||
1 c. Hy-Vee semi-sweet chocolate chips, divided | ||
4 Hy-Vee large eggs | ||
2 ½ c. heavy cream | ||
¾ c. Hy-Vee sugar | ||
1 tsp. Hy-Vee ground cinnamon | ||
Hy-Vee powdered sugar, optional |
Directions
- Preheat oven to 350 degrees.
- Slice bread into 1-inch cubes. Arrange half of bread cubes into bottoms of eight 6-ounce ramekins. Sprinkle half of chocolate chips divided among each on top. Top each with remaining bread cubes and chocolate chips.
- In a medium bowl, whisk eggs, heavy cream, sugar and cinnamon. Pour over bread cubes and bake 25 minutes. Sprinkle with powdered sugar, if desired.
