½ c. chopped red bell pepper | ||
1 ½ c. seeded chopped cucumber | ||
1 tbsp. chopped cilantro | ||
2 tbsp. Hy-Vee Select olive oil | ||
1 tbsp. lime juice | ||
1 tsp. Hy-Vee sugar | ||
½ tsp. Hy-Vee salt |
Directions
- Stir together corn, bell pepper, cucumber and cilantro.
- In a separate bowl whisk oil, juice, sugar and salt. Stir into corn mixture and refrigerate until serving.
