Rhubarb Crumb Pie

⅔ c. salad oil | ||
3 tbsp. milk | ||
3 c. chopped rhubarb | ||
½ tsp. nutmeg | ||

1 tbsp. margarine, melted |
Directions
- Preheat oven to 400 degrees.
- Whisk together 2 cups flour, 2 teaspoons sugar and salt in a large bowl.
- Whisk together oil and milk in a small bowl. Pour over dry ingredients and mix well. Reserve one-third for topping.
- Press remaining into a 9- or 10-inch deep-dish pie pan to form a crust.
- Fill crust with rhubarb. Combine nutmeg, 1-1/2 cups sugar, eggs, melted margarine and 3 tablespoons flour thoroughly. Pour over rhubarb. Sprinkle reserved crumb mixture over top.
- Bake for 15 minutes. Reduce heat to 350 degrees and bake for an additional 30 to 40 minutes.
