Rice Flour Wafers

¼ c. unsalted butter or unsalted margarine, softened | ||
¼ c. white sugar | ||
1 large egg, beaten | ||
grated rind of 1 lemon | ||
¾ c. sifted rice flour | ||
additional rice flour |
Directions
- Cream butter and sugar. Beat in egg and lemon rind.
- Stir in rice flour with a wooden spoon. Let stand for 3 to 4 minutes. Stir again.
- Roll out dough thinly on a rice-floured surface. Cut into squares or cut out with cookie cutters. Place wafers on an ungreased cookie sheet.
- Bake at 350 degrees for 6 to 8 minutes. Check after 4 minutes so as not to brown or burn.
- Cool wafers on wire rack.
