    2 Cornish hens, thawed, rinsed and patted dry
    1 tsp. poultry seasoning, divided
    1 small lemon, cut into 4 wedges

    Directions

    1. Preheat the oven to 400 degrees. Place a wire rack on a baking sheet; set aside.
    2. Season each hen with 1/2 teaspoon poultry seasoning. Place 2 lemon wedges inside each hen cavity. Place hens on prepared baking sheet.
    3. Roast for 30 minutes. Reduce heat to 350 degrees and continue to roast for 30 minutes or internal temperature of the thigh is 170 degrees.
    4. Allow to stand for 10 minutes before carving. Discard lemon wedges.
