Roasted Button Mushrooms with Garlic and Herbs

2 lbs. button or cremini mushrooms | ||
4 sprigs fresh thyme | ||
¼ c. extra-virgin olive oil | ||
4 clove(s) garlic, thinly sliced | ||
¼ tsp. salt | ||
⅛ tsp. freshly ground pepper |
Directions
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Spray with non-stick baking spray.
- Wipe mushrooms clean with a damp paper towel. Using a paring knife, trim mushrooms so they are all cut into 1/2-inch pieces.
- In a medium bowl, toss mushrooms with thyme, oil, garlic, 1/4 teaspoon salt and 1/8 teaspoon pepper. Spread mushrooms onto baking sheet in one layer. Roast 20 to 30 minutes or until browned.
