For an easy and incredibly delicious side that goes well with just about anything, try these fingerling potatoes. Roasting the fennel helps bring out the sweet anise flavor of these seasonal bulbs, while the lemon and garlic add tanginess and savory goodness to the dish.

½ c. thin fennel strips
2 tbsp. Gustare Vita extra virgin olive oil
6 clove(s) unpeeled garlic
1 tsp. kosher salt
½ tsp. Hy-Vee black pepper
2 tbsp. chopped fresh parsley
1 tbsp. Hy-Vee salted butter, cut up
1 tsp. lemon zest
1 tsp. fresh lemon juice

Directions

  1. Preheat the oven to 375 degrees. Cut the potatoes in half lengthwise. Place in a large bowl. Add the fennel, olive oil, garlic, salt and pepper; toss to coat.

  2. Arrange potatoes, cut side down, in a rimmed sheet pan. Top with fennel mixture. Roast for 23 to 28 minutes or until potatoes are fork-tender.

  3. Meanwhile, place the parsley, butter and lemon zest in a large, heat-safe bowl. When potatoes are done, add potato mixture to parsley mixture in bowl. Sprinkle with lemon juice. Toss to coat. Transfer to serving bowl. Carefully squeeze roasted garlic out of peel before eating.
