Directions
- Preheat oven to 325 degrees. Stir together oil, soy sauce and herb rub. Cut slits in lamb. Rub lamb with herb mixture, making sure to get rub mixture into slits.
- Place lamb in a roasting pan. Bake lamb uncovered for 2 hours or until internal temperature reaches 145 degrees. Remove from oven; tent with foil. Allow to rest for 10 minutes.
