    4 large russet potatoes, scrubbed
    2 tbsp. Hy-Vee vegetable oil
    ½ c. cornflake crumbs
    ¼ c. Hy-Vee grated Parmesan cheese

    Directions

    1. Preheat oven to 450 degrees.
    2. Cut each potato lengthwise into 8 wedges. Place in a large bowl and toss with vegetable oil.
    3. Toss together cornflake crumbs and Parmesan cheese and shake over potatoes. Toss to coat.
    4. Spread potatoes on a greased baking sheet. Bake 20 to 25 minutes or until golden.
