Roasted Parmesan Potatoes

4 large russet potatoes, scrubbed | ||
2 tbsp. Hy-Vee vegetable oil | ||
½ c. cornflake crumbs | ||
¼ c. Hy-Vee grated Parmesan cheese |
Directions
- Preheat oven to 450 degrees.
- Cut each potato lengthwise into 8 wedges. Place in a large bowl and toss with vegetable oil.
- Toss together cornflake crumbs and Parmesan cheese and shake over potatoes. Toss to coat.
- Spread potatoes on a greased baking sheet. Bake 20 to 25 minutes or until golden.
