Roasted Turkey Breast

Description
No need to cook the whole bird. Keep things easy by brushing a turkey breast with oil, coating with seasoning, and roasting for about 2 hours.

Directions
- Preheat oven to 350 degrees.
Place turkey breast, skin side up, in a shallow roasting pan. Brush turkey with vegetable oil. Season with oregano, thyme and basil.
- Insert an oven-safe meat thermometer into the thickest part of a breast. The thermometer should not touch bone. Cover turkey loosely with foil.
- Roast for 2 hours.
- Remove foil. Roast for 30 to 60 minutes or until thermometer registers 165 degrees.
- Transfer turkey to a cutting board. Tent turkey loosely with foil and let rest for 15 to 20 minutes before slicing.
