1 tbsp. chopped garlic | ||
1 (14.5 oz) can Hy-Vee petite diced tomatoes | ||
2 c. diced peeled potatoes | ||
½ tsp. Hy-Vee dried oregano | ||
cayenne pepper | ||
1 c. Hy-Vee reduced-sodium chicken broth | ||
¾ lbs. cod, cut into 1-inch pieces |
Directions
- Heat olive oil in a large saucepan over medium heat. Add onions and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Stir in tomatoes, potatoes, oregano, cayenne pepper and chicken broth. Simmer, covered, for 15 minutes or until potatoes are tender.
- Stir in cod. Cover and simmer until cod begins to flake, about 5 minutes.
