Rustic Garlic Mashed Potatoes

2 lbs. Yukon gold potatoes, scrubbed and cut into 1-inch cubes | ||
½ c. Hy-Vee skim milk | ||
1 clove(s) garlic, smashed | ||
2 tbsp. Hy-Vee butter | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Place potatoes in a large pot. Fill with enough cold water to cover. Bring to a boil. Simmer, uncovered, until potatoes are very tender, about 20 minutes. Drain; return potatoes to pot.
- Meanwhile, heat milk and garlic clove in a small saucepan over low heat. Do not boil. Remove garlic clove.
- Mash potatoes using a potato masher. Add milk and butter and continue mashing until desired consistency is reached.
- Season with salt and pepper. Serve with additional butter, if desired.
