1 (5 oz) can boneless and skinless salmon | ||
⅛ c. cornmeal | ||
⅛ c. whole wheat breadcrumbs | ||
¼ tsp. garlic powder | ||
¼ tsp. paprika | ||
3 green onions, chopped, optional | ||
Cooking spray or 1 to 2 tsp canola oil | ||
Toasted bun with lettuce, tomato, cucumber slices, or onions, for serving |
Directions
- Beat egg in a bowl.
- Drain salmon and add to the bowl. Fluff salmon with a fork and stir into egg mixture until coated.
- Add cornmeal, breadcrumbs, garlic powder, paprika and green onions. Stir together.
- Divide mixture in half and form two patties.
- Coat pan with cooking spray or canola oil. Heat patties on high heat until golden brown. Turn patties only once to avoid breaking them.
- Enjoy on a toasted bun with toppings of your choice.
