Salmon Pitas with Herbed Mayonnaise

4 whole wheat pita pocket halves | ||
2 (5 oz each) cans Chicken of the Sea pink salmon, divided | ||
½ cucumber, sliced and divided | ||
½ large tomato, sliced and divided |
Directions
- In a small bowl, combine tarragon and mayonnaise. Lay out the pita pockets on a work surface and carefully open each one. Spread the inside of each half evenly with the mayonnaise spread.
- Stuff pockets with salmon, cucumbers and tomatoes.
