½ jalapeno pepper, seeded and finely chopped | ||
1 (8 oz) can That's Smart pineapple tidbits, drained | ||
½ c. Hy-Vee dried cherries | ||
¼ c. finely chopped green onion | ||
2 tbsp. chopped cilantro | ||
2 tbsp. lime juice | ||
4 (4 oz each) salmon fillets | ||
Hy-Vee salt and black pepper, to taste |
Directions
- In a medium bowl, combine pepper, pineapple, cherries, green onion, cilantro and lime juice. Toss gently to blend. Set aside.
- Place salmon fillets on a greased baking sheet. Sprinkle lightly with salt and pepper.
- Bake in a 425-degree oven for 12 to 15 minutes or until fish flakes easily with a fork.
- Serve fillets with cherry-jalapeno salsa.
