    ½ jalapeno pepper, seeded and finely chopped
    1 (8 oz) can That's Smart pineapple tidbits, drained
    ½ c. Hy-Vee dried cherries
    ¼ c. finely chopped green onion
    2 tbsp. chopped cilantro
    2 tbsp. lime juice
    4 (4 oz each) salmon fillets
    Hy-Vee salt and black pepper, to taste

    Directions

    1. In a medium bowl, combine pepper, pineapple, cherries, green onion, cilantro and lime juice. Toss gently to blend. Set aside.
    2. Place salmon fillets on a greased baking sheet. Sprinkle lightly with salt and pepper.
    3. Bake in a 425-degree oven for 12 to 15 minutes or until fish flakes easily with a fork.
    4. Serve fillets with cherry-jalapeno salsa.
