1 lbs. 98% fat-free ground turkey | ||
1 (15 oz) can Hy-Vee kidney beans, rinsed and drained | ||
1 (14.5 oz) can Hy-Vee diced tomatoes with green chilies, undrained | ||
4 c. Hy-Vee chicken broth | ||
2 c. Hy-Vee frozen mixed vegetables | ||
1 small onion, chopped | ||
3 clove(s) garlic, minced | ||
1 tbsp. ground cumin | ||
½ tsp. hot pepper sauce | ||
1 c. Hy-Vee shredded cheddar cheese, divided |
Directions
- In a large saucepan, over medium heat, cook turkey until no longer pink, about 5 minutes.
- Stir in kidney beans, tomatoes, chicken broth, vegetables, onion, garlic, cumin and hot pepper sauce.
- Bring to a boil. Cover and simmer 10 minutes.
- To serve, ladle soup into a bowl and top with cheese.
