Sauteed Green Beans with Grape Tomatoes

1 tbsp. olive oil | ||
1 large shallot, thinly sliced | ||
8 oz. trimmed green beans | ||
2 tbsp. reduced-sodium vegetable broth | ||
½ c. halved grape tomatoes | ||
¼ tsp. kosher salt | ||
¼ tsp. freshly ground black pepper | ||
Juice of 1/2 lemon | ||
5 large basil leaves, thinly sliced |
Directions
- Heat oil in large skillet over medium heat. Add the shallots and saute for 2 to 3 minutes.
- Add green beans and stir. Add broth; cover and steam for 2 to 3 minutes, until beans turn bright green and are tender-crisp (al dente).
- Add the grape tomatoes. Cover and steam for 1 minute. Uncover and continue to cook until the grape tomatoes are just beginning to soften, about 2 minutes. Add salt and pepper.
- Stir in lemon juice and basil before serving.
