1 c. plus 2 tbsp Hy-Vee all-purpose flour, divided | ||
½ c. Hy-Vee powdered sugar | ||
Hy-Vee salt | ||
½ c. Hy-Vee butter, softened | ||
1 c. Hy-Vee granulated sugar | ||
3 tbsp. lemon juice | ||
2 Hy-Vee large eggs, beaten | ||
Additional powdered sugar, optional |
Directions
- Preheat oven to 350 degrees.
- In a large bowl, combine 1 cup flour, powdered sugar, salt and butter. Press into the bottom of an ungreased 9-inch-square pan. Bake crust for 20 minutes.
- In a medium bowl, combine granulated sugar, remaining 2 tablespoons flour, lemon juice and eggs. Mix well. Pour over baked crust.
- Bake for an additional 20 to 25 minutes.
- Sprinkle with additional powdered sugar, if desired.
