½ c. diced onion | ||
¾ c. sliced baby carrots | ||
¾ c. diced green pepper | ||
1 (14.5 oz) can Hy-Vee fire-roasted diced tomatoes with peppers, onions and garlic, undrained | ||
½ tsp. mild chili powder | ||
1 (15 oz) can Hy-Vee dark red kidney beans, rinsed and drained | ||
8 pita halves, opened |
Directions
- Heat oil in a large skillet. Add onion, carrots and green pepper and cook until tender.
- Add tomatoes and chili powder. Reduce heat, cover and simmer on low 5 minutes. Uncover and simmer 5 minutes more, stirring occasionally.
- Stir in beans and cook until heated through, about 5 minutes.
- Fill each pita with approximately 1/3 cup bean mixture just before serving.
