Directions
Toss together bell pepper strips, zucchini and summer squash slices, red onion wedges, olive oil, and thyme. Season, to taste, with salt and black pepper. Place on foil and fold into a packet.
Grill 20 minutes or until vegetables are tender. Squeeze a lemon wedge over top just before serving.
