Shredded Barbecue Pork

2 ½ lbs. pork loin | ||
½ c. chopped onion | ||
1 clove(s) garlic, minced | ||
¼ c. packed Hy-Vee brown sugar | ||
1 tsp. Hy-Vee dry mustard | ||
½ tsp. Hy-Vee salt | ||
¼ tsp. Hy-Vee black pepper | ||
2 ½ c. Hy-Vee barbecue sauce | ||
1 tsp. liquid smoke | ||
1 tsp. Hy-Vee white vinegar | ||
8 Hy-Vee hamburger buns |
Directions
- Place pork in a slow-cooker.
- In a medium bowl, stir together onion, garlic, brown sugar, mustard, salt, pepper, barbecue sauce, liquid smoke and vinegar. Pour over pork loin.
- Cover and cook on LOW for 6 to 8 hours or pork shreds easily.
- Remove pork loin from sauce, reserving sauce. Shred pork. Stir together pork and reserved sauce. Serve on hamburger buns.
